Ingredients
- 8 Chicken Breasts (Skinned & Boned)
- 2 Onions (Medium Chopped)
- 2 Garlic Cloves (Minced)
- 1 Tbl Vegetable Oil
- 2 14oz Cans Chicken Broth
- 4 15.5oz Cans Cannellini Beans (Rinsed & Drained)
- 1 15.5oz Cans Cannellini Beans (Mashed)
- 2 4.5oz Cans Chopped Green Chilis (Undrained)
- 1 tsp Salt
- 1 tsp Cumin (Ground)
- ¾ tsp Oregano (Dried)
- ½ tsp Chili Powder
- ½ tsp Black Pepper
- ⅛ tsp Cloves (Ground)
- ⅛ tsp Red Pepper (Ground)
- Toppings
- Shredded Pepper Jack Cheese
- Salsa
- Sour Cream
- Cilantro (Chopped Fresh)
- Green Onion (Chopped)
Instructions
- Cut chicken into bite-size pieces. Saute chicken, onion and garlic in hot oil until done. Stir in broth and next 10 ingredients. Bring to a boil - simmer until flavors blend.
- Serve with toppings.
