Rhubarb Crunch

Ingredients
- 1 cup Flour (Sifted)
- ¾ cup Oatmeal
- 1 cup Brown Sugar
- ½ cup Butter (Melted)
- 1 Tblsp. Cinnamon
- 4 cup Rhubarb (Cubed)
- 1 cup Sugar
- 2 Tblsp. Corn Starch
- 1 cup Water
- 1 tsp Vanilla
Instructions
- Combine flour, oatmeal, brown sugar, butter, and cinnamon. Place half in a 9" square pan and cover with rhubarb.
- In a saucepan cook sugar, corn starch, water, and vanilla until thick and clear. Pour over rhubarb and top with remaining crumb mixture.
- Bake at 350F for 1 hour.
