Ingredients
- 1 Onion (Medium)
- ½ Green Pepper
- 2 Garlic Cloves
- 2 Tbl Olive Oil
- 6 oz Tomato Paste
- 28oz Can Tomatoes
- ¼ cup Parsley (Fresh & Minced)
- ½ tsp Oregano
- 1 Bay Leaf
- 6 Lasagna Noodles
- 10oz Frozen Spinach (Chopped)
- 1 lb Ricotts
- 1 Egg
- ¾ cup Parmesan
- 1 tsp Salt
- ¼tsp Pepper
- 3 oz Mozzarella
Instructions
- Saute chopped onion, green pepper, and minced garlic in oil until golden, stirring often.
- Add tomatoes, past, parsley, oregano, and bay leaf. Simmer uncovered for 20 minutes.
- Cook noodles according to package directions. Drain. Combine cooked, drained spinach,ricotta, egg, ¼ cup Parmesan, salt and pepper.
- Spoon ⅓ tomato sauce in bottom of lasagna dish (13x9). Cover with 3 noodles, ½ of spinach-ricotta filling, ½ mozzarella and ¼ cup Parmesan. Repeat layers. Top with remaining sauce, Parmesan and Mozzarella.
- Bake at 350F for 45 minutes. Let stand a few minutes before cutting into squares for serving.
