Poppy Seed Bread

Ingredients
- ¼ cup Poppy Seeds
- 1 cup Buttermilk
- 1 cup Butter
- 1¾ cup Sugar
- 4 Eggs
- ½ tsp Almond Extract
- 1 tsp Vanilla Extract
- 2½ cup + 2 T Flour
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- ¼ tsp Salt
- ¼ cup Sugar
- 2 tsp Cinnamon
Instructions
- Put poppy seeds in buttermilk and let them soak. Cream butter and 1-3/4 cups sugar. Add egg yolks and almond and vanilla. Beat well.
- Sift flour, baking powder, soda, and salt together. Add dry ingredients alternately with buttermilk mixture.
- Beat egg whites until stiff peaks form. Fold beaten egg whites into batter.
- Grease two 9x5 loaf pans. Mix ¼ cup sugar and cinnamon. Pour small amount of batter into pans and sprinkle half the cinnamon sugar over it. Add remaining batter and then remainder of cinnamon sugar.
- Bake at 375F for 45 minutes or until tester comes out clean.
