Vegetable Soup

Ingredients
- ¼ cup Onion (Diced)
- 1 tsp Garlic (Minced)
- 1 cup Zucchini (Thinly Sliced)
- ½ cup Carrot (Thinly Sliced)
- ½ cup Tomato (Chopped)
- 1 tsp Parsley
- ¼ tsp Basil
- 2 cup Water
Instructions
- In saucepan combine onion and garlic and cook till translucent. Add remaining ingredients except water. Cover and cook on low for 10 minutes, stirring occasionally. Add water.
- Bring to a boil. Cover and cook over low heat for 20 minutes. Remove about ½ cup of veggies and set aside. Puree remaining vegetables. Return to pan and add reserved veggies.
